 And for the most fun of all- Outside time with baby bunnies. 
When we uncovered their nest on Thursday, one of the bunnies started hopping out. We couldn't resist holding and giving love to these tiny creatures whose eyes are still unopened, but are getting quite crowded in their nest.























They were even bigger and hoppy-er on Friday...


The children loaded up the wagon with dried grass that had been raked into a pile before all the green grass grew back. They took it to the Forsythia House to make a little nest, and pretended to be baby bunnies

 Thursday Menu

Breakfast:
Duck Egg Omlette with Broccoli, Sweet Potato, 
Red Pepper and OG Chedder Cheese
 Green Juice (Fresh OJ with Blended with Kale)


Lunch:
Roasted Beets and Blue Potatoes
Sauteed Tempeh
Cucumber Slices
Whole Live Oats (cooked like rice)
Alfalfa Sprouts
Almond Milk


Snack:
Fresh Zucchini Muffins (Vegan and GLuten-free) - (made with Chia and Hemp seeds, Buckwheat, Almond, and Coconut Flours. We added the whole quart bag full of thawed frozen zucchini even though the recipe only called for 2 cups. We used Honey and Agave nectar to sweeten them and we forgot to add the eggs but they turned out even better than ever)

Peach Kefir


Friday menu

Breakfast:
Banana Walnut Pancakes
Green Juice


Lunch:
Polenta with Cheddar Cheese
Sauteed Tofu and Mushrooms
Roasted Parsnips
Sauteed Kale with garlic
Almond Milk


Snack:
Zucchini Muffins
Strawberry Smoothie with Plain Greek Yogurt and Apple Juice
